Meal Plan Monday {week 12}
Monday: Spaghetti Bolognese
Tuesday: Homemade Chicken Schnitzel and Salad
Wednesday: Lasagne
Thursday: Breakfast for Dinner... it's just me and the kids so thought I would make dinner a bit fun. They always love breakfast for dinner. Think Bacon, Eggs and Pancakes.
Friday: Homemade Pizza- Again it's just me and the kids
Saturday: Quiche and Salad. It's so hot here and this is always a winner.
Sunday: Silverside and Vege.
Baking: I'm baking Banana, Coconut and Chia Muffins again because the kids LOVE them.

Bacon, Zucchini and Butter Bean Pasta
So I told you yesterday that I am currently doing a stock take of my pantry and freezer and using up bits and pieces that I have lying around.
One such item was several cans of butter beans. My pantry is always pretty well stocked with beans, pulses and diced tomatoes. They are the base to a lot of our dinners. But it seems that we have recently accumulated a large amount of butter beans for some reason.
Anyway, this quick and easy pasta sure helped reduce the quantity of butter beans in the pantry.
Ingredients:
2 cloves of garlic, minced
1 tbs of olive oil
4 rashers of bacon
1 large zucchini
italian herbs
1 can of butter beans
1 cup of uncooked pasta of your choice.
parmasen cheese
salt and pepper
You could add onion too, I just didn't have any on hand.
Method:
Boil water and cook pasta as per packet directions.
Heat oil in frying pan and add diced bacon. Fry off for a few minutes then add garlic and zucchini.
Continue to cook for a few minutes and then add tomatoes. Bring to a gentle simmer. Add butter beans. You just want to heat the butter beans through.
Add cooked pasta and stir through.
Season with salt and pepper and parmesan cheese to serve.

Meal Plan Monday {Week 11}
I'm currently working my way through our pantry and freezer and doing a big of a stock take of sorts. We seem to have tins and tins of lentils, corn, kidney beans, butter beans etc. And I wanted to clean and sort the pantry. So with this weeks menu I am hoping that I will clear out some of the extras we have bulking up the pantry and freezer.
Monday: Bacon and Butter Bean Pasta
Tuesday: Prawn Laksa
Wednesday: Chicken Pad Thai
Thursday: Spaghetti Bake (freezer meal)
Friday: Steak and Homemade Chips
Saturday: Homemade Chicken Spring Rolls and Salad
Sunday: Quiche

Meal Plan Monday {week 6}
I'm back on the meal planning bandwagon again this week after our week away last week (I will be blogging about that later in the week) and I am sticking to some simple recipes that I know the kids love since it is school holidays still here.
Monday: Spaghetti Bolognese
Tuesday: Bangers and Mash
Wednesday: Seafood Laksa (12wbt recipe)
Thursday: Soft Tacos
Friday: Baked Fish and Sweet Potato chips.
Saturday: Falafels and Wraps
Sunday: Roast Chicken and vege
Baking: Muffins, Cheese and Vegemite Scrolls and Biscuits

Meal Plan Monday {week 4}
This week we will be having a lot of mince dishes since I managed to pick up a lot of mince for cheap cheap cheap! Which never happens in this town everything is usually pretty expensive.
Monday: Dinner out for Caden's Birthday
Tuesday: Hamburgers
Wednesday: Seafood Laksa (12wbt recipe)
Thursday: Soft Tacos
Friday: Spaghetti Bolognese
Saturday: Falafels and Wraps
Sunday: Roast Chicken- this may change though as B's mum gets here on Sunday and her flight doesn't get in until 630pm and the airport is an hour away...
